Ingredients
  

  • 4 pieces haddock fish
  • 1/2 cup flour
  • 1 teaspoon salt
  • 3 cups panko breadcrumbs
  • 2 eggs
  • 6 tablespoons mayonnaise
  • pepper to taste
  • tartar sauce, lemon wedges (optional)

Instructions
 

  • Mix the panko, salt, and pepper together in a flat dish for dredging.
  • In another flat dish, add the flour
  • in a third dish mix together the egg and mayonnaise.
  • Dredge each fish fillet in the flour, then into the egg/mayo mixture, and then into the panko/breadcrumbs.
  • Place the coated fish onto a lightly greased air fryer basket.
  • Generously spray the fish with olive oil sray.
  • Place the basket into the air fryer and cook at 350 degrees F. for 8-12 minutes. The fish is done once it is flakey and reaches 140 degrees.
  • Remove and serve with tarter sauce and/or lemon wedges.
