Beat eggs and milk together in a shallow dish. Mix bread crumbs, Parmesan cheese, garlic powder and dried parsley together on a plate.
Heat the oil in a large, oven-proof skillet over medium-high heat.
a) Dip each pork chop into the egg mixture.b) Then coat all sides of the pork chops with the bread crumb mixture.
Place chops in the hot skillet, season with salt and pepper. Cook until golden brown and crisp. About 5 minutes each side. (finish cooking in the oven)
Transfer the skillet into the oven. Bake for 22-26 minutes, or until internal temperature reaches 155 degrees F.
