2lbschicken breasts, diced or substitute with baked tofu
2tablespoonscurry powder*See notes below for spicier version
1mediumonion diced,
3-4clovesgarlic, minced
1cancoconut milk
1cupchicken broth
1tablespoonsolive oil
salt and pepper to taste
fresh cilantro, for garnish
Instructions
Heat oil in a large skillet over medium heat, add in the diced chicken and cook until browned on all sides.
Add diced onion and minced garlic and cook until the onion is translucent.
Stir in the curry powder to evenly coat the chicken.
Pour in coconut milk and chicken broth, stir to combine. Bring to a simmer and let cook 20-25 minutes, or until chicken is cooked through.
Season with salt and pepper to taste. Serve over hot rice, garnish with fresh cilantro. Naan and steamed green beans make terrific sides for this dish.
Notes
Spicier Version:
Change the amount of curry powder from 2 tablespoons to 3 tablespooonsAdd in red pepper flakes to taste 1/4 teaspoon up to 1 teaspoon. I find the 1/4 teaspoon suites my family well. Remember to add in a little at a time, test and add more if needed. If you find that you over spiced the sauce, you can add in 1 more can of coconut milk to dilute it some.
