Ingredients
  

  • 6 medium red potatoes cooked, peeled and diced
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped celery
  • 4-5 hard boiled eggs, peeled and chopped
  • 1/2 cup chopped dill pickles or pickle relish
  • 1/2 cup sour cream
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard or Dijon mustard
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill)
  • 3 tablespoons pickle brine (or white vinegar)
  • salt and pepper to taste
  • 1/4 teaspoon paprika optional

Instructions
 

  • In a large bowl combine the onion, celery, pickles, sour cream, mayonnaise, mustard, dill, brine, and salt and pepper. Mix well.
  • Add in the cooked, diced potatoes and eggs. Stir gently to combine. Taste and add additional salt and pepper, if needed. Sprinkle with a little paprika (optional). Cover and chill until ready to serve.
