2-3poundsbeef cut into bite sized cubes /stew meat or sirloin
1yellow onion, diced
4clovesfresh garlic, minced(or 2 teaspoons of jarred minced garlic)
2tablespoonsfresh ginger or ginger paste
3-4ounceshoisin sauce
8cupsbeef broth
2cansbamboo shoots, drained
1pkgbean sprouts
1pkgfresh mini corn
3packagesramen noodles(without the seasoning packet)
salt and pepper to taste

boiled eggs,sliced in half vertically
green onion tops sliced on diagonal
Instructions
Heat the oil in a dutch oven (or large pot) over medium-high heat. Add the cubed meat and sear on all sides. Remove meat and set it aside. (You may need to do this in batches)
Add the diced onion, garlic and ginger to the pot and cook for 2-3 minutes, stirring occasionally. until browned and fragrant. Add the hoisin sauce and cook another 1-2 minutes.
Add the beef broth, stir to combine. Bring to a gentle simmer, add the seared beef. Cover reduce heat to medium-low and simmer for 15 minutes or until the beef is tender.
Add in the drained bamboo shoots, bean sprouts, and mini corn. Cook for another 5 minutes.
Add ramen noodles (without the seasoning packets)
Ladle into bowls, add boiled eggs and garnish with chopped green onion. Serve
