David's Beef Ramen Noodle Soup

Ingredients
  

Noodle Soup

  • 2 tablespoons oil
  • 2-3 pounds beef cut into bite sized cubes / stew meat or sirloin
  • 1 yellow onion, diced
  • 4 cloves fresh garlic, minced (or 2 teaspoons of jarred minced garlic)
  • 2 tablespoons fresh ginger or ginger paste
  • 3-4 ounces hoisin sauce
  • 8 cups beef broth
  • 2 cans bamboo shoots, drained
  • 1 pkg bean sprouts
  • 1 pkg fresh mini corn
  • 3 packages ramen noodles (without the seasoning packet)
  • salt and pepper to taste

Toppings

  • boiled eggs, sliced in half vertically
  • green onion tops sliced on diagonal

Instructions
 

  • Heat the oil in a dutch oven (or large pot) over medium-high heat. Add the cubed meat and sear on all sides. Remove meat and set it aside. (You may need to do this in batches)
  • Add the diced onion, garlic and ginger to the pot and cook for 2-3 minutes, stirring occasionally. until browned and fragrant. Add the hoisin sauce and cook another 1-2 minutes.
  • Add the beef broth, stir to combine. Bring to a gentle simmer, add the seared beef. Cover reduce heat to medium-low and simmer for 15 minutes or until the beef is tender.
  • Add in the drained bamboo shoots, bean sprouts, and mini corn. Cook for another 5 minutes.
  • Add ramen noodles (without the seasoning packets)
  • Ladle into bowls, add boiled eggs and garnish with chopped green onion. Serve
