Preheat oven to 350 degrees.
Pound chicken breast to 1/2" thick. (if they are very thick, you can cut them in half, then pound)
Place flour into a shallow dish. Place the beaten eggs into a second dish. Place bread crumbs mixed with 1/3 cup Parmesan cheese into a third dish.
Dip the chicken into the flour, then dip into beaten eggs and finally dip into the bread crumbs. Press the bread crumbs gently so that they stick to the cutlets. Repeat with the remaining cutlets.
Preheat oil in a large pan. Brown the chicken on each side. Fry 3-4 cutlets at a time so that they are not over crowded.
Pour 1 - 1 1/2 cups of marinara sauce in the bottom of a 9x13 dish. Add the cutlets, top each piece with a couple tablespoons of marinara sauce, mozzarella, and Parmesan cheese.
Bake 20-25 minutes or until chicken reaches 165 degrees F. and the cheese is melted. Garnish with fresh herbs.
