These waffles are light and fluffy. Perfect with a little butter and your favorite syrup and berries. Simple to make, with some time saving make ahead ideas.
2cupbuttermilk(or you can use milk plus 1 tablespoon white vinegar, let sit 3 minutes)
2largeegg
1tablespoonsvegetable or canola oil
Instructions
In a medium bowl, whisk together the dry ingredients (flour, salt, baking powder, and baking soda). Set aside and in a separate bowl, mix together the buttermilk, egg, and oil.
Pour the buttermilk mixture into the flour mixture and stir together just until combined. Pour batter onto a heated waffle iron and cook according to your waffle iron's instruction.
Serve with you favorite syrup and toppings.

VARIATION:Rich: Make as above but use 4 eggs and substitute 1/2 cup melted butter for the oilPecan: Make as above but add 1 tablespoon of sugar and 1 cup coarsely chopped pecans.
