Equipment

  • Baking sheet lined with tin foil

Ingredients

  • 2 1/2 pounds salmon filet (with or without the skin)
  • 4 tablespoons melted butter
  • 2 tablespoons brown sugar (or 3 tablespoons honey-or-maple syrup)
  • 2 tablespoons fresh lemon juice (about 1/2 of a lemon)
  • 4-5 cloves minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1 1/2 teaspoon salt or salt to taste (rule of thumb is 3/4-1 teaspoon of salt per pound of salmon)
  • 1/4 teaspoon black pepper
  • fresh parsley or dried dill for garnish optional
  • 1-2 thinly sliced lemons

Instructions

  • Let the salmon come to room temperature. Pat dry with paper towels.
  • Preheat the oven to 400 degrees F.
  • In a small bowl whisk together the melted butter, minced garlic, fresh lemon juice, brown sugar and seasonings. Set aside
  • Line a large baking sheet with aluminum foil. Place the lemon slices in a single layer on top of the foil. Place the salmon, skin side down, on top of the lemon slices.
  • Drizzle the butter sauce over the salmon, use the back of a spoon to spread it evenly over the entire filet.
  • Place on the center rack of the oven and bake for 8-12 minutes, or until meat thermometer reaches 140-145 degrees.
  • If desired, garnish with chopped parsley or dried dill.

Notes

Daily Free Option:  Substitute extra virgin olive oil or avocado oil in place of the melted butter.
