Here are three easy variations to customize your creamy Parmesan Italian dressing while keeping its tangy, herby, cheesy core. All keep the base oil, Parmesan, mayo, and oregano—so they’re just as quick to make. Which one are you trying first?

1.  Lemon-Herb (Lighter & Brighter) Great for summer salads, grilled fish, seafood, or chicken.

  • Use 2 Tbsp lemon juice + 1 Tbsp vinegar (or all lemon).
  • Add 1 tsp lemon zest.
  • Swap dried parsley/basil for fresh (1 tsp each) or extra dried.
  • Optional: Pinch of red pepper flakes

2.  Spicy Garlic Caesar-Style Bold and perfect for romaine or kale. Punchy, restaurant-quality with a Caesar twist.

  • Double garlic (2 cloves or add ½ tsp powder).
  • Add 1–2 tsp anchovy paste.
  • Increase black pepper to ¾ tsp + ¼ tsp red pepper flakes.
  • Optional: 1 tsp Dijon mustard.

3.  Balsamic Sun-Dried Tomato (Rich & Mediterranean) Ideal for caprese, roasted veggies or antipasto salads.

  • Swap vinegar for 3 Tbsp balsamic.
  • Add 1–2 Tbsp chopped sun-dried tomatoes (or 1 Tbsp paste).
  • Replace basil with ¾ tsp thyme or add ½ tsp smoked paprika.
  • Optional: 1 Tbsp fresh basil or 1 tsp pesto.

Tips for Success in Making Salad Dressing

•  Emulsification: The mayonnaise helps stabilize the dressing so it doesn’t separate as quickly, but always give it a good shake before serving.

•  Storage: Store in an airtight jar in the refrigerator for up to 7 days. The olive oil may solidify when cold—just let it sit at room temperature for 10 minutes before using.

•  Variations: For a lighter version, reduce the mayo to ½ Tbsp. Add a pinch of red pepper flakes for heat, or fresh herbs if you have them.

•  Make it vegan: Swap Parmesan for nutritional yeast, use vegan mayo, and adjust seasoning.

Ingredients
  

  • 1/2 cup extra virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1/4 cup Parmesan cheese, finely grated i.e. Parmigiano-Geggiano
  • 1 tablespoon mayonnaise
  • 1 teaspoon sugar
  • 1 clove garlic, finely grated or pressed
  • 1/2 teaspoon dried oregano 1/2
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Combine all the ingredients into a jar, place the lid on and shake until well combined and emulsified. You can also place ingredients in a blender and mix.
    This keeps for 2 weeks in the refrigerator. If it becomes too thick, bring to room temperature before useing.
