Indian Chicken Curry is a wonderful tasty, flavorful dish that packs a punch. Whether you love spicy meals or are simply eager to experiment with new culinary experiences, curry chicken is an excellent choice for a satisfying dinner. 

One thing to note is that this dish is its simple to prepare; using curry powder makes the cooking process quick.  The deeply flavorful sauce perfectly balances heat, sweetness, and savoriness

This recipe has two versions one milder curry and a spicer version. Sure to please everyone’s taste. Try substituting Tofu in the recipe in place of chicken

Served with butter naan or steamed basmati rice along with fresh steamed green beans.

Easy Restaurant-Style Indian Chicken Curry

Ingredients
  

  • 2 lbs chicken breasts, diced or substitute with baked tofu
  • 2 tablespoons curry powder *See notes below for spicier version
  • 1 medium onion diced,
  • 3-4 cloves garlic, minced
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tablespoons olive oil
  • salt and pepper to taste
  • fresh cilantro, for garnish

Instructions
 

  • Heat oil in a large skillet over medium heat, add in the diced chicken and cook until browned on all sides.
  • Add diced onion and minced garlic and cook until the onion is translucent.
  • Stir in the curry powder to evenly coat the chicken.
  • Pour in coconut milk and chicken broth, stir to combine. Bring to a simmer and let cook 20-25 minutes, or until chicken is cooked through.
  • Season with salt and pepper to taste. Serve over hot rice, garnish with fresh cilantro. Naan and steamed green beans make terrific sides for this dish.

Notes

Spicier Version:

Change the amount of curry powder from 2 tablespoons to 3 tablespooons
Add in red pepper flakes to taste 1/4 teaspoon up  to 1 teaspoon.  I find the 1/4 teaspoon suites my family well.  Remember to add in a little at a time, test and add more if needed.  
If you find that you over spiced the sauce, you can add in 1 more can of coconut milk to dilute it some.
 

Substitutions:  

Replace the chicken with baked tofu
