Easy Restaurant-Style Indian Chicken Curry
Ingredients
- 2 lbs chicken breasts, diced or substitute with baked tofu
- 2 tablespoons curry powder *See notes below for spicier version
- 1 medium onion diced,
- 3-4 cloves garlic, minced
- 1 can coconut milk
- 1 cup chicken broth
- 1 tablespoons olive oil
- salt and pepper to taste
- fresh cilantro, for garnish
Instructions
- Heat oil in a large skillet over medium heat, add in the diced chicken and cook until browned on all sides.
- Add diced onion and minced garlic and cook until the onion is translucent.
- Stir in the curry powder to evenly coat the chicken.
- Pour in coconut milk and chicken broth, stir to combine. Bring to a simmer and let cook 20-25 minutes, or until chicken is cooked through.
- Season with salt and pepper to taste. Serve over hot rice, garnish with fresh cilantro. Naan and steamed green beans make terrific sides for this dish.
