David’s Beef Ramen Noodle Soup has layers of flavors that meld together perfectly. It is as good – or – even better than what many restaurants make.  This is my son’s Beef Ramen Soup recipe and he makes it often. Left overs are just amazing!

Tip: Using store bought broth, and pre-cubed beef, saves time prepping.

Season the soup with hoisin sauce, ginger paste, garlic, and onion. To finish the soup, addd in fresh mini corn, bean sprouts, canned bamboo shoots, and ramen noodles (without the seasoning). Garnish with boiled eggs and green onion.

Ingredients
  

Noodle Soup

  • 2 tablespoons oil
  • 2-3 pounds beef cut into bite sized cubes / stew meat or sirloin
  • 1 yellow onion, diced
  • 4 cloves fresh garlic, minced (or 2 teaspoons of jarred minced garlic)
  • 2 tablespoons fresh ginger or ginger paste
  • 3-4 ounces hoisin sauce
  • 8 cups beef broth
  • 2 cans bamboo shoots, drained
  • 1 pkg bean sprouts
  • 1 pkg fresh mini corn
  • 3 packages ramen noodles (without the seasoning packet)
  • salt and pepper to taste

Toppings

  • boiled eggs, sliced in half vertically
  • green onion tops sliced on diagonal

Instructions
 

  • Heat the oil in a dutch oven (or large pot) over medium-high heat. Add the cubed meat and sear on all sides. Remove meat and set it aside. (You may need to do this in batches)
  • Add the diced onion, garlic and ginger to the pot and cook for 2-3 minutes, stirring occasionally. until browned and fragrant. Add the hoisin sauce and cook another 1-2 minutes.
  • Add the beef broth, stir to combine. Bring to a gentle simmer, add the seared beef. Cover reduce heat to medium-low and simmer for 15 minutes or until the beef is tender.
  • Add in the drained bamboo shoots, bean sprouts, and mini corn. Cook for another 5 minutes.
  • Add ramen noodles (without the seasoning packets)
  • Ladle into bowls, add boiled eggs and garnish with chopped green onion. Serve

    I make this soup at least once a month. Everyone loves it! I make a double batch, leftovers are terrific for lunch the following day.
