This Classic Potato Salad is delicious and so easy to make. It’s a recipe that I got from my mother and it is a true summer classic.
Today instead of sour cream I use mayonnaise or a mix of the two.
This easy potato salad probably has ingredients that you already have on hand. It’s the perfect salad to take to potluck or make for a family bbq. I hope you enjoy it as much as we do.

Easy Potato Salad
Ingredients
- 6 medium red potatoes cooked, peeled and diced
- 1/2 cup finely chopped red onion
- 1/2 cup chopped celery
- 4-5 hard boiled eggs, peeled and chopped
- 1/2 cup chopped dill pickles or pickle relish
- 1/2 cup sour cream
- 1 cup mayonnaise
- 1 tablespoon yellow mustard or Dijon mustard
- 1 teaspoon dried dill (or 1 tablespoon fresh dill)
- 3 tablespoons pickle brine (or white vinegar)
- salt and pepper to taste
- 1/4 teaspoon paprika optional
Instructions
- In a large bowl combine the onion, celery, pickles, sour cream, mayonnaise, mustard, dill, brine, and salt and pepper. Mix well.
- Add in the cooked, diced potatoes and eggs. Stir gently to combine. Taste and add additional salt and pepper, if needed. Sprinkle with a little paprika (optional). Cover and chill until ready to serve.
