I’m sharing my granddaughters favorite waffle recipe, that she converted to a plant based recipe, so that her dad could enjoy them too. These waffles are wholesome and easy to make. Even more special because she made them on her own and from scratch.

Cooking is a life long skill, and learning early is really beneficial for kids. It’s a lot of fun, creates good memories and chances are, it will widen their interest in healthy foods. Plus learning how to follow a recipe helps to increase their reading, math and science skills.

Below you will find both versions of the recipe (basic and plant-based).

Tips For Making Waffles:  

Mixing: Use a bowl with a spout or a large measuring cup to mix the batter in. It makes it easier to pour your batter, either into a measuring cup or straight onto the waffle maker.

Measuring flour:  The best way is to spoon it into the cup until it is heaping.  Then sweep the excess off the top, with the flat edge of a table knife.

Batter: Make sure you don’t over-mix your batter. Over-mixing will end up making a chewy waffle instead of a light airy one. It’s best not to stack waffles as this helps to prevent them from turning soggy before eating.

Serving: We enjoy eating them as soon as they are made. However, you can also keep them warm and serve them all at once. This way everyone can eat at the same time. Heat the oven to 200 degrees F.  Set a cooling rack on top of a cookie sheet and place into your oven.  Place the waffles onto rack inside the warm oven, (the rack helps keep them crispy, remember not to stack them). Continue making waffles until all the batter is used.

You can enjoy any leftovers as a snack during the day.

Charlotte’s Waffles

These waffles are super simple to make. They are nice and crispy on the outside and fluffy on the inside. Plus they are easily adaptable for those on a plant based diet, you will never know the difference.

Equipment

  • Waffle Maker

Ingredients
  

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk /Plant Based use oat or almond milk
  • 1/3 cup canola oil
  • 2 eggs /Plant Based use equivalent/Just Egg
  • 1/4-1/2 teaspoon vanilla

Instructions
 

  • Heat waffle maker
  • In large bowl beat the eggs, then stir in the remaining ingredients,
  • Pour the required amount of batter onto the center of hot waffle maker and close the lid.
  • If your waffle maker doesn't have an auto alert button, then bake for about 5 minutes or until the steaming stops. Check the waffle, it should be golden brown.
  • Carefully remove the waffle and serve.
