Buttermilk Waffles

These buttermilk waffles are light and fluffy. They go perfectly with a little butter, maple or blueberry syrup. Add fresh berries and dust with a little powder sugar if desired.

This recipe uses both baking powder and baking soda making them the fluffiest, best tasting waffles. The baking powder does the lifting and makes them airy. The baking soda reacts with the buttermilk, giving them their tangy flavor and is what makes buttermilk waffles so good!

Make and serve one at a time or bake up the whole batch before serving. To keep the waffles warm, while fixing the entire batch, place them in a preheated oven (250 degrees F).

Waffles are best when eaten as soon as they’re baked. Leftovers can be stored in the refrigerator. Reheat for 6 minutes in a preheated oven at 350°F, or warm them up in the toaster.

Make ahead tip: Make your own waffle pre-mix by combining just the dry ingredients in advance. Cutting down on prep time making these waffles as convenient as the store bought mix.. To do this, just mix the dry ingredients from the recipe together (flour, salt, sugar, baking powder and baking soda). If you are making multiple batches at one time, put each batch into its own zip-lock bag. Label it and store until you are ready to make.

When ready, place the pre-mixed dry ingredients in a bowl along with the wet ingredients. (buttermilk, egg, and oil). It’s that easy!

Variations to the waffles:

Stir each time you pour batter for the waffles.

  • Blueberries: Stir in 1/2 cup of fresh blueberries to the batter just before cooking.
  • Chocolate Chips: Stir in 1/3-1/2 cup of chocolate chips to the batter just before cooking.
  • Cinnamon Chips: Stir in 1/3- 1/2 cup of cinnamon chips to the batter just before cooking.
  • Rich:  Make as above but use 4 eggs and substitute 1/2 cup melted butter for the oil
  • Pecan:  Make as above but add 1 tablespoon of sugar and 1 cup coarsely chopped pecans.  Stir batter each time before pouring onto waffle grill to distribute nuts.
  • Sweet Milk: Make as about but omit buttermilk and soda.  Use t tablespoon baking powder and regular sweet milk instead of buttermilk

Ingredients
  

  • 2 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cup buttermilk (or you can use milk plus 1 tablespoon white vinegar, let sit 3 minutes)
  • 2 large egg
  • 1 tablespoons vegetable or canola oil

Instructions
 

  • In a medium bowl, whisk together the dry ingredients (flour, salt, baking powder, and baking soda). Set aside and in a separate bowl, mix together the buttermilk, egg, and oil.
  • Pour the buttermilk mixture into the flour mixture and stir together just until combined. Pour batter onto a heated waffle iron and cook according to your waffle iron's instruction.
  • Serve with you favorite syrup and toppings.

Notes

VARIATION:
Rich:  Make as above but use 4 eggs and substitute 1/2 cup melted butter for the oil
