Authentic Tuscan Soup
Equipment
- large pot with lid
Ingredients
- 1/2 cup oil-packed sun-dried tomatoes, drained and diced
- 5 slices bacon, diced
- 1 cup dice yellow onion, 1 medium
- 1 cup diced carrots, 2 carrots
- 1 pound Italian sausage, hot or mild
- 1 tablespoon minced garlic, 3 cloves
- 1 teaspoon Italian seasoning
- 2 tablespoons flour
- 1 15.5 ounce canned cannellini beans, drained and rinsed
- 1 32 ounce carton chicken broth, 4 cups
- 3 cups fresh baby spinach, coarsely chopped
- 1 cup half and half cream
- salt and pepper to taste
Instructions
- In a large pot, over medium high heat, add the diced bacon and cook until browned and crisp. Remove and set aside on paper towel to drain.
- Add diced onion and carrots to the pot with the remaining bacon grease. Sauté for 3 minutes. Push the carrots and onions to the side of the pot, add the Italian sausage, let sear, then break it apart and cook until browned.
- Stir in sun-dried tomatoes, garlic, Italian seasoning and flour, continue to stir for another minute.
- Add in the drained beans and chicken broth. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10 minutes. Add the chopped spinach and half and half cream, stir until the spinach is wilted..
- Season with salt and pepper. Ladle into bowls, top with reserved bacon and garnish with Parmesan cheese.
