Baked Butternut Squash caramelized with butter and sugar is a favorite side dishes that I look forward to every fall. It makes a terrific side for Thanksgiving or Christmas dinners or anytime.

Pre-cut butternut squash helps make this really quick to prepare.  Place the cubed squash onto a parchment lined, baking sheet.  Drizzle the squash with the melted butter and brown sugar.  Lightly season, mix to combine, evenly spread out onto prepared pan, then bake.

Make Ahead:  This can be prepared a day or two ahead of time, stored covered in the refrigerator.  Reheat and serve.

Variations

  • Nuts – Add chopped pecans or walnuts after baking.
  • Sweetener – Substitute the brown sugar, by using 2 tablespoons of honey, agave or maple syrup.

Equipment

  • baking sheet pan

Ingredients
  

  • 1 medium butternut squash, cut up into cubes
  • 3 tablespoons melted butter
  • 2-3 tablespoons brown sugar maple syrup, honey, or agave
  • 1/4 teaspoon salt
  • dash black pepper, optional

Instructions
 

  • Preheat oven to 400 degrees F.
  • Place the cubed squash onto a parchment line, ridged baking sheet.
  • Drizzle with the melted butter and brown sugar. Lightly season, mix to combine, spread out evenly onto prepared pan.
  • Bake in preheated 400 degree F oven for 30-45 minutes, turning with a spatula halfway through the cooking time. Serve or refrigerate for latter.
