This simple sheet pan dinner features sausage and vegetables. It includes sweet potatoes, broccoli, bell peppers, garlic, and Italian seasoning. The cooking time ranges from 30 to 40 minutes. White or brown rice makes a nice side to have with it.
This sausage and vegetable recipe is low in carbs, healthy, and vibrant in color and flavor. It can be easily adjusted to include any vegetables your family enjoys. Note that root vegetables need more time to cook, so cut them smaller for even cooking.Â
Sheet Pan Sausage Bake is customizable, you can choose vegetables that your family likes. Some examples would be Brussels sprouts, carrots, summer squash, zucchini, onions, cherry tomatoes or baby potatoes. Baby red or gold potatoes, cut in half or quarters are ideal.
If you prefer some spice to the sausage bake , consider adding red pepper flakes to the seasoning. Avoid overcrowding the pan – overcrowding can lead to steaming instead of caramelizing the vegetables; if necessary, use two sheet pans for better results.

Sheet Pan Sausage Bake
Equipment

Ingredients
- 12-16 ounces Smoked Sausage
- 2 cups sweet potato, diced into 1/2" cubes
- 2 cups broccoli florets
- 1 cup bell pepper, chopped (any color)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning, taco, cajun or your favorite spice blend
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Pre-heat oven to 400 degrees F
- Slice the sausage into 1" rounds. Dice the sweet potatoes into small 1/2" cubes.
- Add the sausage, all the vegetables and minced garlic to a large baking sheet. Drizzle with olive oil along with all the seasonings. Toss with your hands until everything is coated with olive oil and spices.
- Bake for 20-30 minutes, flipping halfway through. Serve with rice on the side.
