Homemade Artisan Bread made without kneading is easy and fast to prepare.  With only four ingredients and a little bit of prep time, you can enjoy delicious no-knead artisan bread right in your own kitchen.

Baking the bread in a Dutch oven gives the loaf a beautifully, golden-brown color.  Along with the crispy crust, the center is both soft and chewy with tiny air pockets. This recipe, inspired by Nagi from Recipe Tin Eats, is suitable for bakers of all skill levels.  

After mixing the dough, let it rest covered for a couple of hours. Then either bake it immediately or store the dough in the refrigerator for up to 48 hours before baking.  This No Knead Artesian Bread consistently yields excellent results and is easy enough to make every week.

Ingredients for Artesian Bread:

  • Flour: Bread Flour or All-Purpose Flour
  • Yeast: Rapid Rise or Instant Yeast
  • Salt: 1 1/4 table salt
  • Water:  Warm water (115-125 degrees F)

Equipment Needed:

  • Dutch oven (cast iron) or large round casserole with lid. One way to create a steam environment without using a Dutch oven is to put a pan of hot water in the oven while the bread bakes.
    Parchment paper
  • Food thermometer 

Variations: Add in during step 1 of the recipe

  • Garlic: 1-2 cloves of fresh minced garlic
  • Herbs: Add fresh chopped herbs such as rosemary
  • Everything Bagel Seasoning: Add in 1 tablespoon of Everything Bagel seasoning
  • Cheese: Add in 1/2 cup grated Parmesan or Romano cheese

Toppings:

Optional toppings to add once the dough is formed and placed in the Dutch Oven. Moisten your hand with water and lightly pat the top of the bread dough. Then sprinkle with one of the following:

  • Flaky Sea Salt
  • Poppy Seeds
  • Sesame Seeds
  • Pumpkin Seeds
  • Everything Bagel Seasoning
  • Sunflower Seeds

Storage: Store in plastic zip-lock bag for up to 3 days.

Famous No Knead Artisan Bread

Master the art of making no knead artisan bread. This simple recipe creates a beautifully textured loaf with minimal effort.

Equipment

  • parchment paper
  • Dutch Oven covered casserole dish, or refer to note above

Ingredients
  

  • 3 cups bread flour or all-purpose flour
  • 2 teaspoons rapid rise or instant yeast
  • 1 1/4 teaspoons table salt
  • 1 1/2 cup very warm water 110-125 degrees F.

Dough Shaping

  • 1 1/2 tablespoons flour for dusting

Instructions
 

Mix Dough

  • Mix flour, yeast and salt in a large bowl. Add in the warm water (110-125 degrees F). Mix together with a wooden spoon until all the flour is incorporated. The dough will be soft and sticky. Adjust with a little more water or flour if needed.

Rest/Rise Time

  • Cover the dough with plastic wrap, leave on the counter for 2-3 hours or until double in size. OPTIONAL: Refrigerate the dough for up to 3 days. If refrigerated bring to room temperature for 1 hour prior to baking.

Preheat Oven and Dutch Oven

  • Put the dutch oven in the oven with the lid on and preheat to 450 degrees F. for 30 minutes prior to baking.

Shape Dough

  • Dust the work surface with 1 tablespoon flour, turn the dough out and sprinkle the top with flour. Push the sides of the dough inward to shape into a ball. Flip the dough onto a piece of parchment paper.

Bake

  • Remove the pre-heated dutch oven and using the parchment paper, place dough in and cover with lid. Bake 30 minutes covered, then 12 minutes uncovered or until golden brown. Cool on a rack for at least 1 hour before slicing.
    NOTE: Internal temperature should read 210 degrees F. with an instant-read thermometer
